The other option is to drain away as much of the mixture from the apple slices as possible, in a large hole colander. Then you can add in a replacement mixture, sans cinnamon. You can also wash the mixture off the apples, if you like- but that makes a mess. I had to do this once a few years back when an child-helper added in cinnamon before realizing the storage jar did not have a sprinkler top lid.

Then use part as filling for one pie, and keep part for another use.
