My toffe separates when I add the vanilla at the end . Why? I have made the hsame recipe for years

Could the fault lie in the vanilla? True vanilla flavoring will always be alcohol based, while some of the imitation varieties are alcohol free. That means the amount of water they contain vary. It is also possible your pan sides have tiny sugar crystals which formed during cooking, and are getting knocked down in the mixing in of the vanilla. Or you are getting a sudden temperature drop, mixing in cooler air with the vanilla.
