is that a Baking Steel I saw you put the puffs on in the oven?

I am new to baking, I thought I saw a baking steel when you popped the puffs into the oven. Is that correct? why place it ontop of steel or whatever that is?

Hi John, yes! I almost always keep a baking stone in my oven. Not necessary by any means but: It helps regulate the oven temperature. And with baked goods—like flaky pastries, scones, and biscuits—it encourages a better browning compared to an oven rack.
