chicken breast brine/buttermilk time and quality questions

is it okay to brine chicken breast for 4 to 8 hours in a buttermilk, seasonings and salt mixture. then lightly rinse and set in cold water in fridge overnight and then in morning bread and deep fry the chicken?

That's a lot of submerged time there. A chicken breast would probably be mushy after 2 days of soaking. It's also not really necessary to do it that way. The overnight soak in seasoned buttermilk is all that is required before you drain, bread and fry it. Why go to all the trouble to get seasoning into the meat, only to suck it back out with an overnight in plain water? Which is what would happen. So instead of a two day soak, why not just stick with one overnight in the seasoned buttermilk, and then fry it up as planned?
