Hi Chris, I am surprised that no one else has offered help, so thought I would comment. First, your time should be based on the individual (3.5 lb) size but it is always best to use a meat thermometer. Secondly, a lot depends on the type of oven you are using. It may be best to brown the roasts before putting them in a residential size oven because the three roasts together may give off excess steam and although your roasts will be cooked through, they may look boiled or steamed. Full disclosure: I have been a vegetarian for 20 years or so. Prior to that I cooked the full range of red meat for a large family.
