For a cubano sandwich, you need 2 types of pork: 1. roasted pork 2. ham

For the roasted pork, look for Cuban Lechon recipes. Usually, pork shoulder is marinated in mojo (a citrus marinade with garlic, onions, & oregano), then roasted until tender. There are recipes for grilled Lechon too. Either is fine. There are plenty of good recipes out there. Just do a search.

Once you have the Lechon, you'll only need to assemble the sandwich. Any cooked ham (except honey ham, I think it's too sweet) sliced thin.

For the bread, use an airy roll like Mexican bilillos or Vietnamese baguette. You don't want a dense bread with a thick crust. Eating a Cubano should not be a workout for your jaw.

Put both meats (sliced very thin) into the bread. Don't pile on the meat, but have enough for the different flavors and textures. For each sandwich, add a slice of Swiss cheese, a slice of dill pickle, and a light spread of yellow mustard (like hotdog mustard). Brush the outside of the sandwich with melted butter and griddle in a non-stick pan until golden and crisp. Serve immediately.
