Would those of us who aren't vegan be able to replace the Agar with gelatin, and if so, how much gelatin would you recommend?

Actually check how much you'd need to 1 1/2 cups of liquid not 2 cups!

Ive never used gelatin so I'm not sure but you could try searching for how much is needed to set 2 cups of liquid?
