Does it have to be coconut oil? I get that some oils don't harden when frozen, but are there other oils that would work as well?

You can use vegetable oil, but it may not harden up as much. The chocolate will harden when chilled by the ice cream, so it's worth a try, if you don't want to use coconut oil. ;o)
