You could, but expect the ice cream to be a lot harder, as the coconut cream when chilled will get harder than dairy cream would. (I see that there is 1/4 cup of liqueur in this recipe, so that may make it softer than it otherwise would be.)
Also, if using a coconut cream that is sweetened, dial back the sweetened condensed milk to 1/2 cup - and add a teaspoon of espresso powder. You won't taste the coffee, but it will cut the sweetness and add complexity.
