Hi Vivienne,
I agree with Lori; I think it really depends. My suggestion would be trying it out with Bob's Red Mill 1 to 1 Baking Flour. It is light and tends to work great in cake recipes :)

Hi!
Could I use the thinner liquid from the full-fat coconut milk can (after taking the cream out for the whipped topping) as my 1/2 cup of low fat milk in the cake portion?

Hi Swathin,
I have not tried using the coconut water in this recipe so I cannot guarantee the results. My guess is that it might be a little too light and the coconut flavour might not be as strong. If you do give it a try let us know how you find it.

A lot depends on the formulation of your gluten free flour. There are also a lot of brands out there on the market now, some work a lot better than others. That's why the only way to know for sure requires you to simply use what you have or like to use in the recipe, and see for yourself. Honestly, I think it's best if you use a recipe designed to be used with your particular brand of GF flour, or at least one that is formulated to utilize a GF flour. Converting recipes isn't always as straightforward as plugging in one ingredient in place of another.
