If you want to gild the lily, roast the pineapple before adding, to give the cake some charred, caramelized taste.

It’s a hummingbird carrot cake, I love that idea! Drain/squeeze out the pineapple as others said, and leave out the sad, withered grapes

I don't see why you couldn't sub in pineapple, as long as the pineapple is drained as thoroughly as possible. Maybe even squeezed to get rid of excess liquid.

Totally! +1 for being sure all excess liquid is drained, and would also make sure to cut the pineapple into raisin-sized chunks, so it doesn't interfere with the crumb too much.
