too hard paneer from store bought cottage cheese

i recently shifted to UK and found cottage cheese as an alternative to paneer. i also make homemade paneer from milk using lemon juice. From store bought cottage cheese, i boil it n add lemon juive which curdles the cottage cheese n it leaves behind very less whey (compared to milk) but my paneer always turns out 'hard' using this method (from store bought cottage cheese). how can i make soft paneer using the same (store bought cottage cheese) please? thank you
