Initial 8h fridge Proofing stage

Hi there, is the initial 8 hour refrigeration necessary or can the dough be placed in the fridge till it's chilled enough?

I would follow the recipe exactly, as you are not just chilling the pastry, but also giving the yeast a chance to work it's magic.  ;o)
