Dividing the dough
Hello, After folding the dough for the fourth time and refrigerating it, how do I divide the dough? should I rolled it out again to a certain size and divide it? or do I divide the dough stray form the fridge?
2-If I want to use a quarter of the dough, can I freeze the rest or do I have to shape the croissants before freezing them?
