You certainly can substitute the GF one-to-one for the AP flour.
Given the quantity of butter, however, I would not use coconut oil, for a number of reasons (for one, the taste could overwhelm the other flavors, which are a bit delicate). I'd use a vegan butter spread (Earth Balance is my go-to) instead, substituting at most a few tablespoons of coconut oil. ;o)
