Can I bake a pound cake starting in a cold gas oven?

I have a family recipe that calls for Baki g a pound cake in a cold oven for 90 minutes at 325 degrees. Can this be done in a gas oven?

There are baked goods recipes where you start in a cold oven. Given the low baking temperature, the long bake time makes sense. I don't think it matters if it is a gas oven. Theoretically, you would not need to adjust anything (temp or time). Let us know how it comes out :)

Marsmal, I think there’s a bit of a misunderstanding. 350 degrees is a standard baking temperature. Many ovens automatically are even set to 350 degrees when you turn them on.

When a recipe says cool oven or hot oven, or sometimes a slow oven, it means relative to 350 degrees.

So your recipe simply means to preheat the oven to 325, which is a slow or cool oven. When the oven reaches temperature, put your cake in and bake it for 90 minutes or until done.

It doesn’t matter whether it’s a gas oven or electric oven for your purposes. I hope this answers your question (I’m not sure if this is what you were asking)

The recipe calls for putting it into an oven that has not been pre-heated or turned on. In my prior electric oven I put the cake in, shut the door, and set the temp to 325. I’ll let you know how this turns out.

I’ve baked them both ways. I think I prefer starting it in a cold oven, I feel like it cooks slower and more even. I’ve also baked it at a high temp for 10 min, then reduced the temperature for the remainder 45. Try both ways and decide.
