I know it’s past at the point but Jubilee by Toni Tipton-Martin is a great cookbook to reference. She recently did an interview on NPR and discussed Juneteenth, the foods celebrating African American culture and her book.
(Realizing that I'm saying this as a white woman...) If you want to dig into the food of Juneteenth, I'd suggest you watch the fourth episode of "High on the Hog" on Netflix. The whole series is great, but the fourth episode is devoted to Texas and Juneteenth. You'll find barbecue, red drinks, and red velvet cake (red foods in general).
