Help! Added gelatin too soon to mirror glaze- ruined?
Im making a chocolate mirror glaze and and added the gelatin along with the other ingredients to heat- i was supposed to add after it gets up to temp, off heat. Is it completely ruined?? I dont have enough ingredients to make a new batch!

I ended up boiling to only about 180 degrees after reading that the setting properties of gelatin degrade rapidly at 212. However it set quite firm pretty quickly so I put it back on gentle heat with an additional 2 T cream and 2 T water to get it back to pouring consistency. It actually worked like a charm, shiny no lumps and perfect coverage.
