clarification on discrepancy between ingredients and instructions

The list of ingredients don't mention scallions, but in the 2nd step, they are listed with the garlic and ginger. How many scallions should I use, and how should I chop them up?

When you encounter incongruous instructions online, the first thing to do is to see if they were posted elsewhere.

It took me less than ten seconds to find the original recipe on the author's blog:

http://www.thingsimadetoday.com/2016/06/22/stir-fried-beef-bok-choy-trunips/

where the quantity is listed as "5 scallions, chopped."

This type of basic online sleuthing isn't specific to Food52 or just food recipes. It is pertinent to Linux system administration tutorials, auto repair, knitting, whatever.

That's great advice, 702551. I often do that for well-known recipe creators, but I see now that it can be helpful in other instances as well. Thanks for reminding us! ;o)

Alternatively, you could use 3 or 4 scallions and cut them into inch long pieces for the stir fry. It’s very forgiving.

I’d use 3 or 4 scallions, cut into 1/4” pieces, stopping an inch or two into the dark green part. ;o)
