I’ve made Dori Sanders’ no-churn lemon ice cream many times. My family adores it!

I’ve made this ice cream whisking by hand, and I’ve made it using a hand mixer. We much prefer the results when it’s made with the electric mixer. The texture is a bit lighter and smoother — somehow the ice cream seems more luxurious. If you have the extra minute or so - and it really does add just a minute, when all is said and done, to get out your electric mixer, snap the beaters in and then take them out and wash them — I do recommend using a mixer for this. Take care to scrape the bowl with a flexible spatula 3 or 4 times, to ensure that the sugar is fully integrated. ;o)
