The recipe says to pour half over the enchiladas before serving and to serve the rest on the side. So you might not have all that much left, depending on how much your family likes/wants sauce.
The cashew cream should last for 3 or 4 days in the fridge, but it can also be frozen for 3 - 4 months. (Some people say up to 6 months, but I find less is better with nut creams.). ;o)
