Can we get a non-pumpkin version?

Wonderful recipe. Enjoyed it so much we would like to make a non-pumpkin classic cheesecake flavored version. How would you adjust the recipe?

Or, use an existing tested version of the basic Japanese jiggly cheesecake.
I've not made it yet, but Tasty has a recipe in both written and video versions that's been made and liked by about four thousand people.

Also, in the pumpkin version, the vegetable provides part of the structure.
Just removing it might make the overall structure too soft and wobbly.
