Would this work as well if I scooped the dough into balls, chilled them, then flattened them slightly on the cookie sheet before baking?

I’ve made these a couple of times, and I find the recipe to be really tricky, so I probably wouldn’t. That said, it’s cookies! No reason not to try. You can always crumble them into ice cream if they don’t work out.

Or, just test two or three . . . . if it doesn't work, then make the rest of the dough as instructed. For a cookie like this (I have not made this particular recipe), I'd let them sit on the cookie sheet for a few minutes before removing them - especially if using the flattened ball method you're thinking about. I'd take special care not to over bake them, as they will continue to bake while on the cookie sheet.
