Whatever you choose, consider frying them separately and then serving them together. Mushrooms give off a lot of liquid when cooking which could prevent the potatoes from getting really crispy. I’d cook the mushrooms first, keep them warm, wipe out the frying pan and then fry the potatoes.
Russet and Yukon Gold are good varieties for pan frying. Any mushrooms you like or can get. Dried mushrooms are usually expensive and best saved for dishes where required or braising. If they're the only ones you have, soak and drain before pan frying.
