Could I use half&half instead of heavy cream?

Not for health reasons, it’s just what I have in the fridge. Could I add butter to make up for it having less fat?

I'm with drbabs, and don't see any reason why you couldn't use the half and half. I also would pass on extra butter. Heavy cream is rich and luscious, but I make a similar thing and found my family actually preferred the less rich version.

I’d use the half and half and not add any more butter. It might take a little bit longer to cook, but i'm sure it will be delicious.
