With six cups of flour, that's a lot of pizza to cover. The olive oil is flavored with the garlic and then drizzled over the pizza dough. I would use at least a quarter of a cup, giving it plenty of time to infuse with the garlic flavor. If you think that's too much, toss that lovely oil with roasted potatoes or other roasted vegetables (after roasting, to finish them), or use it in a simple vinaigrette. No such thing as too much garlic infused olive oil!
That's a great idea, by the way. I'm going to try it on my pizzas and focaccia henceforth! I bit of chopped fresh rosemary might join the party . . . . . ;o)
