Does Food52 sell the fluted cutter/knife you used to to cut the potatoes?

Hi Amanda, I used a thrifted crinkle cutter for cutting these, nothing fancy. It was a recent find, so I was eager to use it with this recipe, but it’s definitems not a necessity. Your wedges will turn out just as great with a regular cut :)

You'll get more browning by *NOT* using a crinkle cutter as there will be more surface area directly contacting the sheet pan.

I recall seeing an America's Test Kitchen episode about oven fries and they concluded that planks were better than wedges because there are two large flat sides for browning. They also did this unusual thing coating the potatoes with (if I recall correctly) a warm potato starch slurry which enhanced the formation of a crust.

It is worth tracking down this episode to understand the approach of oven fries.

Crinkle cut fries work better when deep fried since indentations are still in full contact with the oil. While I have no personal experience with air fryers I'm guessing that crinkle cut fries work better in those as well.

From the photo, those potato wedges look like they've been cut with a standard chef's knife. The instructions don't say anything about using any other tool. Perhaps what we're seeing there is the light shriveling of the peel that sometimes happens when you cook potato wedges on a sheet pan, as called for in this recipe. ;o)
