You could however I would expect it to lose some flavor.
Restaurants and bars that make flavored simple syrups from scratch typically just refrigerate them and try to use them up in a week or so.
When I make this sort of thing, I just leave it in the fridge. At least that way I can pull it out when I need it and pour off the desired quantity.
If you freeze it you'll have to defrost the whole container even if you only need a tablespoon. Depending how cold your freezer gets you might be able to use an ice cube tray for small portions.
