Could clementines be used instead of the oranges?

Clementines have much looser skins so slicing thin and simmering could cause issues with them falling apart. OTOH, I love clementines and would try the slice/simmer with just one to see how it works out b/c I think they'd make this cake awesome.

They will work.

Read the comments: others have tried Cara Cara, blood oranges and mandarines from a quick skim of the first half of the comments (I did not read all of them).

There was at least one comment about excessive bitterness and another about the oranges adding too much sugar.

I would likely skip the oranges (and I like citrus) and just keep this as a cardamom-olive oil cake.
