Substitute for evaporated milk?

Would this be possible without the evaporated milk? If it needs some kind of milk, would oat or almond work, or would that throw off the chemistry?

Looking at the recipe, I think you could use almond or oat milk. I'm guessing the evaporated milk is there, more for richness and is used later to make the cheese sauce. I don't see anything that would upset the ratios in this dish. Recipe instructs you to add more warm water if the sauce is too thick. Give it a try and let us know.
