Can I substitute milk in a baking recipe with almond milk?

My son is allergic to the protein in cow's milk so I use almond milk all the time. I do a lot of baking & haven't had any issues. The only thing I have noticed is if you use it in mashed potatoes they turn a slight grey color...
Make sure if you are making a savory thing like Mac n cheese that you don't use the vanilla flavored almond milk! 😜

In general I've found that almond milk works pretty well as a substitute 1:1, but it is lower fat (more like a reduced fat cow's milk than whole milk), so that may be something to keep in mind!
