If you are using fresh herbs and butter under the skin, do you rub it in on Day 1 or on roasting day?

I would rub and add the butter/herbs on the day you are going to roast. The Judy Bird instructions are for dry brining the turkey. Butter will not be contributing anything to the brining other than sitting on top, and preventing the salt/water movement into and out of the meat (aka brining).

Yes to what HalfPint said.
And/or grind up some dried herbs with the salt you put on to start the dry brine.
