Is it Possible to make Crust less please? If yes, how would you amend the recipe to do that?

You can certainly make a quiche without the crust, so long as you obviously have a baking dish that will not allow leaks. I make them frequently, since it's great for using up bits and leftovers, and good in a bento lunch box. The only real change is to make sure your baking dish is greased, oiled or sprayed with a nonstick spray. Mind you, without a crust what you have is really a frittata and not a quiche- but that's culinary nitpicking. If you want to change things up, you can also dust the baking dish after spraying with either breadcrumbs or panko, which will help make sure it all lets go once it cools a bit.
