Doubling and baking time adjustments

If I double this recipe, can I bake it in an 12” round cake pan that is 3” deep instead of using two 9 inch cake pans? Also, how many minutes should I bake this cake if I double it and put it in a single cake pan?

Go to crafty baking.com where you will find a chart from Wilton about baking 3” deep layer cakes for weddings, they will have info on how to use your 12” pan successfully.
Other options for making two of the Laurie Colwin damp gingerbread (a great cake):
• make it in a tube cake or Bundt pan (the air tube jn the middle helps with heat penetration);
• make it in single batches in sequence.
