This is a traditional recipe from a time before the widespread adoption of refrigerators so it should be fine for a couple of days stored in a cool and dry place. My guess is that you could shove it in the fridge for a week to extend its longevity.
That said with the custard filling, I would expect some noticeable decline of ephemeral fresh charm after a couple of days.
Whether or not you want to serve this to guests a week later is entirely call based on what you think those people would enjoy.
I certainly wouldn't serve week-old custard-filled cookies to my mom, for example. But that's just me...
