Lotus root and fresh water chestnuts

I recently found out how amazing the flavor of fresh water chestnuts is, and have a several pounds in water in the fridge ready to go. I also love fresh lotus root - the whole root I peel myself. Does anyone have a recipe or idea for a salad that includes both of these items and the dressing to go with it?

Oh my, I envy you. I don't have a formal recipe, but I would julienne both and toss them with some fresh coriander and a dressing of smashed lemongrass, a nut oil, and a light vinegar.
