What does the term "shimming" potatoes mean?

I have a note on a potato salad recipe that reads "Food52 suggests "shimming" the potatoes on a sheet pan to give them a "finished" texture for the mayo mixture to stick to." My notes don't attribute the comment to a particular recipe. Does anyone know what that process is?

Maybe "shimmying"? I imagine that it refers to shaking them up a little to create a little bit of mash on the outside for the mayo to stick to.
