i just hold open the pastry bag with my hand cupped around it, and slide the saran tube down into it. does that make sense?

Just my two cents worth.
The rosemary is probably dominated by the ginger and other flavors.
So you could just omit it.
Or use an aromatic that goes better with the existing seasonings.
Say, lemon grass, cilantro or a whole lemon

H2 fill pastry bag? Well - known tip: put empty bag in a tall glass and spoon in icing, pastry, etc.

I can't recall ever having rosemary dominated by another flavor, it's pretty powerful stuff.
