Always have beurre manie handy, or perhaps cornstarch depending on the dish. Usually can't go wrong with beurre manie, flavor-wise.

Oh, that’s unfortunate. Maybe make a slurry with sauce and cornstarch and add that to the sauce while you cook it down? That should help.

i tried potato flakes but they didn't work either. i'm not sure the recipe has been tested as written.
