Beef Wellington with Sausage meat stuffing instead of mushroom

I want to make a beef Wellington however I do not like mushrooms. I have an idea of replacing the mushroom layer with a garlic and herb sausage meat stuffing, the bit I am unsure of is do I need to cook the stuffing before wrapping it around the beef?

Haven’t done this substitution, and you could go either way (or split your recipe in half, do both ways and compare).
But I would flavor cooking (partial or complete) before you assemble the Wellington to bake. It will give you better control over taste (the garlic, balance of seasonings) and texture (drain off excess fat from the sausage).

Thank you! I think I will go with cooking it first! I will post an update with a photo of the result (providing it doesn’t terribly lol)
