If I do 2 mini Bundt pans what would be the cooking time?

Depends on what you mean by mini.

If a tray of 6 or 12, treat like cupcakes - bake about 15 to 20 minutes, or until tester comes out clean.

If a separate cake pan of about 3 to 6 cups, treat like a layer cake and bake about half hour, or until tester comes out clean.
