I should have added this to be more helpful to you. Not all dairy products have the same amount of lactose & some people tolerate it differently. For example milk & ice cream Are high in lactose. Hard aged cheeses are low. I can tolerate Parmesan. Thats why I suggested that you should ask. I am always so thankful when people ask. You are so thoughtful to ask.
Ideas/direction: • search vegetarian versions of dishes you already know - that’ll be easier and familiar that all-new to you; • look for recipes in cuisines that are heavily vegetarian (India Pakistan Bangladesh Sri Lanka; Persian North Africa); • use beans nuts or eggs as protein anchors; • serve a buffet for one or two meals, with a vegetarian and dairy free main, but/and optional garnishes of cheese, meat or dairy sauces for those without the dietary limits
Examples of dishes to serve - • vegetable tagline or couscous (Morocco) • roasted cauliflower or cauliflower steaks (India, Middle East, American) • chickpea (garbanzo) pancakes, sauced or filled, southern France or India • sabich - roasted eggplant sandwich with various pickles, hot sauces and toppings (Iraq)
