Hi Rowena! A whole branzino typically weighs between 1 and 3 pounds, and a roughly 1.5 pound branzino is perfect for two people, so you could substitute a whole trout in that range. Let us know how it turns out!

The trout turned out to be a great substitute. We rarely see branzino around here. Will be making it again.
