Should the pork belly be Skin on or skin off?

The recipe doesn't specify, but since you will be cutting it into smaller size cubes- you would find removing skin easier to do before you cut and cook, than after it's done. And boiled pork skin isn't my cup of tea, either. However, IF you remove, marinate and boil that skin along with the meat- you have luscious makings of chicharrons.
