What kind of farro should I use? Regular, semi pearled or pearled farro? Seems as if 10 minutes cooking time wouldn’t be enough for regular fa time

A few answers.
OTOH, the headnote says the farro in this dish is like brown rice. So to get similar benefits, use (whole) farro. And cook as long as it needs.
OTOH, use whichever type of farro you have on hand, prefer and/or can get in your markets. And - same - cook as long as it needs.
