Pearl Sugar and "Crumbs" - not in ingredient list?

Instructions say to top with "crumbs" and pearl sugar, but these are not mentioned in the ingredient list. Not sure what counts as "crumbs." Thanks!

As for pearl sugar, just do an Internet search. You'll find some articles explaining that it's a type of sugar that is popular in Europe for decorating.

I'm sure you can find in from online retailers like everyone's favorite Big A.

Remember that this is a recipe from a pro who runs her own pastry shop. She has ingredients at her disposal that aren't in the typical home pantry.

It's really your call whether or not you want to search an obscure ingredient to be used for just one preparation which will then take up space in your cupboard.

For me, I'd say "forget it" and maybe sprinkle some powdered sugar right before serving.

Oh, since this recipe calls for baking six brioche rolls, you could easily experiment with different sugar toppings. I would be tempted to sprinkle demerara sugar (already in my pantry) on one roll to see if it brings a crunch to the top.

Perhaps the recipe author will see this question and respond.

Pending that, here's some background - This dessert is a family recipe made and made famous by a Polish baker who moved to St Tropez after World War II.

If you look up the Wikipedia article on it, or other recipes, you'll get information about the crumbs and maybe the pearl sugar.

Be careful in your searching as I got some "site not secure" warnings and quickly left the site.

Last postscript. Found recipes in English (without either site security problem or need to wade through French).

Just enter “tarts tropezienne” in your search engine and it will provide a bunch of English blog and food publication recipes.
