Preserved lemons are made with partially quarter cut lemons coated in kosher salt, refrigerated and let mature for about a month. They are basically a fermented pickle product, made with lemons instead of the usual cucumbers or other veg. Although you can buy them, they are simple to make yourself. You just need a jar, some salt, and preferably organic lemons- or at least, unsprayed lemons since you will be keeping the rind on the fruit. Aside from that, all you need it time and patience for the good little gerbies to do their job.
