Grilled spatchcock chicken w/anchovy marinade
Love this recipe. BUT: What happens to the 2 tablespoons of butter in the ingredient list? Is it used to enrich the reserved marinade concoction that is used as condiment on cooked chicken?

Yup, in the ingredient list but not used in directions.
My two cents' worth - If there weren't fat in the recipe, I might think it was for coating the chicken skin, before or after grilling. But there's a whole cup of olive oil already in the marinade and grilling process.
So, use it only if you see a need or want the flavor. Otherwise, just omit
Last thoughts - there are many versions of this dish or something like it, most using ingredients from southern France, Sicily, or Thailand. Little or no butter in them either.
