I only have active yeast. What would be the amount for active yeast? Also, Do I store open or unopened yeast in the refrigerator ?

On replacing instant yeast with active:
• amount - use same volume or weight
• rise time - if the recipe only called for room temp rise, you probably would need longer than 1 hour. However, since there is an overnight fridge rise, there is enough time for the active yeast to work.
• where to store yeast - most types dry and sealed, ok at room temp. Open dry types - I prefer storing in the fridge for longer effective life, but don’t remember where I learned it (long time bread maker). If someone else says fridge not needed, I’d be interested in knowing the reasoning.
• storing fresh yeast - always in the fridge, and for much shorter durations.
