Boiled eggs turn yellow and rather rancid

I have been boiling eggs for 55 years. I raised layers too. Only since moving into town where water in very hard and high in chlorine my boiled eggs turn yellow. I have rarely had this before. I always bring water to a boil, gentle add eggs. Boil for 10-15 minutes. Then immerse eggs in very cold water. Store in frig. Eggs always peel easily. Here in the city the boiled eggs are good until about a week later the white become yellowish and those always smell and taste bad. In a few batches the darkest yellow do not peel cleanly at all and the albumen is oddly soft.

Strictly guessing here...... I assume you are using "store-bought" eggs, rather than eggs fresh from the hen house out back? The issue could be that those store-bought eggs are already a week or two old when you purchase them, then it may be a couple days before you cook them. According to the USDA, seven days is as long as you can safely eat hard cooked eggs after cooking, and yours are already older eggs to begin with. Don't know for a fact, though.......

I use the same technique for boiling eggs but do only 8-10 min for hard boiled. I also keep them shelled until ready to eat and I've found my eggs to last longer. Also, have you checked the temperature of your fridge? Perhaps this one isn't as cold as your previous fridge. I've also seen people store boiled eggs in water in the fridge, then replace the water every few days
